The vinifier and cryomaceration tank form a universal tank for cold maceration, fermentation of blue and aromatic grape varieties by the method of gentle and continuous leakage of fermentation gases and for the storage of wine, musts and liquids in the food industry as a closed storage tank.

Fermentation of the mash in the vinifier VM / VMH takes place in such a way that after the start of fermentation the rotary degasser is set in motion, which wades through the mash with its arms. This creates escape routes for the fermentation gases. The slow and continuous escape of fermentation gases at controlled mash temperature creates optimum conditions for the fermentation process and creates the conditions for for the highest quality of the wine produced.
- Circular tank with cone-shaped bottom standing on three legs / a lying circular tank with two legs.
- In the lowest place a circular discharge with fitting and shutter DN100.
- Duplicator welded on the shell is for heating and cooling of mash; insulated and sheathed with a stainless-steel sheet.
- rotary degasser at the top with inlet and outlet pipes for cooling medium; chain drive with electric gearbox
- Switch box for the rotary degasser on the front side of the Vinificator.
- In the lower part of the shell: butterfly valve for filling and valve for discharge DN40.
- Upper hole Ø 500 mm with vent valve DN50.
