Temperature profile of the mash during cryomaceration: where the largest error occurs

The Reality of Most Reservoirs

In tanks cooled exclusively through the jacket (duplicator), a typical phenomenon occurs:

  • a layer near the wall that has been intensely cooled 
  • a gradual increase in temperature toward the center of the volume 
  • minimal mixing or only passive convection 

Temperature sensor (temperature probe):

  • measures the local temperature 
  • usually near the refrigerated section 

The result is a systematic underestimation of the actual average mash temperature.

A non-uniform temperature profile means:
